That depends on the hops, as well as how the hops are prepared. The wrong hops steeped too long make very unsettled and bitter beer. You should try something that's dry hopped, because the flavor is a lot more nuanced. Samuel Smith's IPA is a good mass-produced British example of what you should be looking for

I live about 25 miles from, but work in Fort Collins, which I believe is only about another 25 miles from one of the largest CO fires (High Park).
