She is a human replica droid, but that does not mean that you can detect what she is. She aims to deceive, thus her design incorporates this. Her outer layers are a viscosity-variant polymer synth-flesh, with nano-replication abilities. This means that if you cut her, she will bleed, and everything will look as if it were a biological being. You have to go a good bit deeper to find the durasteel frame that houses her inner workings.
She can replicate approximations of scent pheromones. Not good enough to stand up to close scrutiny, but unremarkable in a pass.
She has an internal bio-rhythm transponder. If she is scanned, the transponder signal is returned, showing that she is a normal, living being. Thus, such scans are ineffective on her.
She has no force signature, correct, but other beings don't either. Toydarians, Hutts, Cizerack, Vong, etc. No assumptions can be immediately drawn from this.
Thus, the only way you can say "Ah ha! She's a droid!" is to put her under a scalpel.
