Since Zelda has been mentioned already, and while I really could go on and on about all those wonderful themes, I'll simply throw the Modern Warfare music into the mix instead. In particular, the soundtrack to the second in the series courtesy of Hans Zimmer, and it never fails to give me chills and psyches me up for some serious action:

The game that I think deserves an honourable mention is Mass Effect - quelle surprise, huh? ;)

The reason I bring it up isn't because of the "while you're playing" music. There are lots of games that have fantastic music that plays through the levels - like Droo's example - that is wonderfully atmospheric, and amps up the suspense or helps to make the situation you're in more severe.

Mass Effect does that too, but what it also does is create a really good theme which is used as a touchstone to tie everything together. If it was a Star Wars game or a Star Trek game, that'd be when we'd get a few bars of the Imperial March, or the Next Generation theme, or something like that: something that reminds you that you're not just playing any old scifi game, but specifically one of that franchise.

It's a really simple technique - I guess it's where the term 'recurring theme' comes from - but it really works. Whether it's the "Fuck Yeah!" arrangement from when you get made a Spectre, the Normandy theme from Mass Effect 2, the climactic ending once you've saved the day... it's there, it's instantly recognisable, and it's simple enough that it's easy to hum along to while you're playing.

I'm not the only one that joins in with game soundtracks, right? :uhoh

As for past games, I've always loved the Hell March song from the Red Alert series of C&C games.

While modern epic high fidelity orchestral soundtracks are nice, there is something to be said about a 1 hour soundtrack written in assembly code to fit on 720kB 3 1⁄2-inch floppy disks, at a time when PC's usually did not even have a sound card, only the annoying BIOS bleeps. IMO, Chris Hulsbeck ranks as one of the most genius video game soundtrack producers of all time.

The first two C&C games had amazing soundtracks (C&C and Red Alert).
Can't leave out Super Metroid, System Shock 2, Thief/2, Fallout: New Vegas, Half-Life. There is other stuff I'm leaving out but that's some of my favorite games with stellar soundtracks.

If you like the System Shock 2 music (or have never heard it) - check out the System Shock 2 mix station where you can mix the various tracks as if they were naturally changing in-game.

In addition to having a fantastic musical score playing throughout, LA Noire also has a jaw-dropping amount of period-specific music available on the radios of the cars you drive. Great non-PC classics like "Smoke Smoke Smoke (that cigarette)" and even whole programs of the Bickersons.

It gets my vote just because the other good ones have already been mentioned.
