You have until May 14th (broken finger tips make for less fun cooking :(). Any filling works (sweet, savory, etc) and there are instructions for multiple ways to cook them!
Edit - I don't have a food processor, or special cutty rings, but that's what multi-taskers are for ;)

Oh hell yes. I've never done pocket pie stuff so this should be really fun!

Mmmm I probably can't do this one on time for the challenge, but I'd love to try out a plantain-coconut-curry filling. Maybe when I can eat wheat again. ^__^
I'm excited to see what you culinary geniuses come up with! :D

Not joining this one - won't be at home until the 9th of May, but I'll be there for the next.

I'm really excited about making these, I already have an idea for what I want to put in them :D Just need to find a rolling pin (no wine bottles in the house, grr).

Mine will probably be next weekend or so. This one's booked up for middle eastern food and maybe some Tapas.
Please post pics and description of your whole process. I love to see that stuff :)

Little sister has been enlisted as sous chef and photographer. I over did it my hand on Wednesday, so it's still a bit sore. I might need help kneading.
I just wish she wasn't such a damn picky eater, so I'd have some feedback on my cooking. :(

Okay, done baking. Here's some notes I made:
- Don't get so excited about the different fillings, or you'll be like me, leaving the grocery store without the shortening >_>;
- I rolled the dough too thin at first, so when I rolled out the rounds and filled them, they ripped. Fillings also have to be really small.
- 90% of them "exploded" in the oven, so I don't know if I put too much filling in them or what. It wasn't *THAT* bad, but still.
The crust is really good, and I tried to make some interesting flavors. I used apple/asian pears with brown sugar and nutmeg, and peaches with blueberries (pie filling, real blueberries were expensive/really gross looking at the store :s).
Pictures!

No you haven't. ;) I'm fashionably late too. I haven't posted mine yet. There aren't any firm binding times or anything.

Yeah, if you make them and want to post, post away!
I actually made another batch with jam as a filling, and they were way better than the first! (yay peach jam owns) :D

Oh man, if only you were here now. I could give you a gross of the best tasting peaches ever. I ate a wicked juicy one at lunch today.
